Abstract


Grilled meat is consumed in Benin, exposing many consumers at the risk of poisoning. Dioxin found in grilled meats sold in Cotonou are up to 20 times higher than those recommended by the World Health Organization (1pg I-TEQ/g). The risk of dioxin contamination in meat is higher in the center of Cotonou. Doses are linked to environmental factors, the neighborhoods activities, and exposure to volatile organic pollutants. The results of this study encourage an analysis of chemical and microbiological hazards in order to ensure food security.

Abstract: (french)


La viande grillée est très consommée au Bénin, exposant ainsi de nombreux consommateurs à des risques d'intoxication. Les concentrations de dioxines retrouvées dans les viandes grillées vendues à Cotonou sont jusqu'à 20 fois plus élevées que celles recommandées par l'Organisation Mondiale de la Santé (1 pg I- TEQ/g). Plus on s'approche du centre-ville de Cotonou, plus le risque de contamination par les dioxines dans les viandes est élevé. Les doses seraient liées à des facteurs environnementaux, aux activités avoisinantes, et à l'exposition aux polluants organiques volatiles. Les résultats de cette étude incitent à une analyse des risques chimiques et microbiologiques afin de garantir la sécurité alimentaire.
