Abstract


Nutrient contents and antioxidant capacity of four tomato varieties (UC82 b, Amiral F1, locale cotelette and locale cerise) were determined by spectrophotometric method. Among these varieties, Amiral F1 had the highest antioxidant capacity with an EC50 of 3.47 mg/mL and rate of total polyphenols (17.5 mg/100 g GAE). In addition, locale cotelette was richer in lycopene (2.9 mg per 100 g of fresh tomatoes) and vitamin C (35.4 mg/100 g of fresh tomatoes) than other tomato varieties. The highest calcium (31 mg per 100 g of fresh tomatoes), magnesium (21 mg per 100 g of fresh tomatoes) and potassium (333 mg per 100 g of fresh tomatoes) contents were also observed for this variety in particular. The results highlighted that UC82 b was the best source of iron (0.065 mg per 100g of fresh tomatoes), phosphorus (23 mg per 100 g of fresh tomatoes), manganese (0.086 mg per 100 g of fresh tomatoes) and zinc (0.11 mg per 100 g of fresh tomatoes). This work showed that the different varieties of tomatoes studied have high antioxidant capacity. Thus, they could be used to prevent oxidative stress.

La teneur en nutriment et en composés à pouvoir antioxydant de quatre variétés de tomate (UC82 b, Amiral F1, locale côtelette et locale cerise) ont été déterminés par la méthode spectrophotométrique. Parmi ces variétés étudiées, Amiral F1 présente le plus fort pouvoir antioxydant avec une EC50 de 3,47 mg/mL et le plus fort taux de polyphénols totaux (17,5 mg/100 g EAG). Par ailleurs, la variété locale côtelette est la plus riche en lycopène (2,9 mg pour100 g de tomate fraîche) et en vitamine C (35,4 mg/100 g de tomate fraîche). Cette variété présente également le plus fort taux de calcium (31 mg pour 100 g de tomate fraîche), de magnésium (21 mg pour 100 g de tomate fraîche) et de potassium (333 mg pour 100 g de tomate fraîche). La variété UC82 b représente la meilleure source de fer (0,065 mg pour 100g de tomate fraîche), de phosphore (23 mg pour 100 g de tomate fraîche), de manganèse (0,086 mg pour 100 g de tomate fraîche) et de zinc (0,11 mg pour 100 g de tomate fraîche). Il ressort de cette étude que les différentes variétés de tomates étudiées sont dotées de forts pouvoirs antioxydants. De ce fait, elles pourraient être utilisées pour lutter contre le stress oxydatif.
