Children malnutrition remains a serious public health problem in general in Cameroon. The aim of this study was to investigate the nutritional compostion of selected Cameroonian local baby flours. Five varieties of Cameroonian local baby flours were collected in the production structure in Yaound

Abstract: (french)


La malnutrition infantile reste un problème de santé publique en général au Cameroun. Ainsi, ce travail détermine la composition nutritionnelle de quelques farines infantiles artisanales du Cameroun. Cinq variétés de farines infantiles artisanales ont été collectées dans la structure de production à Yaoundé. Ce sont : farine 1 (maïs, soja, arachide, sucre); farine 2 (maïs, soja, sucre) ; farine 3 (maïs, soja, arome lacté, sucre); farine 4 (maïs, soja, blé, riz, sucre) et farine 5 (maïs, soja, poisson séché, sucre). Les teneurs en eau, cendres, protéines, lipides et fibre brutes ont été déterminées selon les normes AOAC. Les teneurs en minéraux (calcium, magnésium, sodium, potassium, fer, cuivre, zinc et manganèse) ont été déterminées par spectrophotométrie d’absorption atomique et le phosphore par colorimétrie. Il ressort des analyses que la composition des différentes farines varie de : eau (7,19- 8,21g/100g) ; cendres (0,68-1,03 g/100g) ; protéines (8,42-11,01 g/100g) ; lipides (1,00-2,08 g/100 g) ; fibre brutes (2,01-2,83 g/100 g) ; énergie (394,34-402,37 Kcal/100g ); calcium (2,63- 15,92 mg/100g) ; magnésium (54,87-76,72 mg/100g) ; sodium (0,48-1,99 mg/100g) ; potassium (259,38- 318,81mg/100g) ; phosphore (177,75-281,67 mg/100g) ; fer (2,01-2,19 mg/100g) ; zinc (1,59 -2,27 mg/100g ) ; manganèse (0,54-0,64 mg/100g) ; cuivre (0,32-0,33 mg/100g). Le poisson fumé améliore significativement les teneurs en protéines et en minéraux de ces farines.
