Abstract


The study aimed to assess the risk linked to the consumption of beef meat. A total of 108 beef meat samples composed of 54 fresh beef and 54 braised beef « Choukouya » samples were collected in Bouaké and Korhogo. Escherichia coli, Staphylococcus aureus, Clostridium spp. and Salmonella spp. were isolated according to the French standard. The results showed that the bacterial contamination rates ranged from 88 to 100% and 66 to 100% for fresh and braised meat, respectively. In total, 89% braised beef showed microbial loads beyond the limit of acceptability and Salmonella spp. was found in 11.1% of the samples. The probability of ingestion of contaminated braised beef was 0.52. The consumer survey revealed that 12.9% reported daily consumption of braised beef. After braised beef consumption, 16.4% of consumers reported that they contracted a foodborne illness. Symptoms most often mentioned were diarrhea (63.6%) and fever (22.7%). The etiologic fraction and the attributable risk were estimated at 84% and 77%, respectively. In conclusion, Braised beef meat sold in the streets of Bouaké and Korhogo represent a potential risk of poisoning for the consumer. It is therefore recommended that VBB leather well and improves hygienic practices to preserve the consumers’ health.

L’objectif de l’étude est d’évaluer le risque de toxi-infection lié à la consommation de la viande bovine. Au total, 108 échantillons de viande bovine dont 54 échantillons de viande bovine fraîche et 54 échantillons de viande bovine braisée « Choukouya » ont été collectés à Bouaké et Korhogo. Escherichia coli, Staphylococcus aureus, Clostridium spp. et Salmonella spp. ont été recherchés selon les normes françaises. Les résultats ont montré des taux de contamination allant de 88 à 100 % et de 66 à 100 % respectivement pour la viande bovine fraîche et la viande bovine braisée. Au total, 89 % d’échantillons de viande braisée analysées ont montré des charges microbiennes au-delà de la limite d’acceptabilité et Salmonella spp. a été isolé dans 11,1 %. La probabilité d’ingestion la viande bovine braisée contaminée était de 0,52. L’enquête de consommation a révélé que la consommation de la viande bovine braisée était quotidienne chez 12,9 % des personnes enquêtées. Après la consommation de la viande bovine braisée, 16,4 % des consommateurs ont rapporté une toxi-infection dont les symptômes majoritaires ont été la diarrhée (63,6 %) et la fièvre (22,7 %). La fraction étiologique et la fraction étiologique du risque sont évaluées respectivement à 84 et 77 %. La viande bovine braisée vendue dans les rues de Bouaké et Korhogo représente un potentiel risque de toxi-infection pour le consommateur. Il est donc recommandé de bien faire cuir la viande bovine braisée et d’améliorer les pratiques hygiéniques afin de préserver la santé du consommateur.
