Abstract


Despite the fact that many infant formulas exist, malnutrition is still a problem in Cameroon. According to previous studies, this malnutrition could result from inadequate feed practises, lack of time from parents and the fact that mothers are not involved in the formulation process. The aim of this study is to improve the adoption of locally produced instant formulas by the integration of mothers in the formulation and price determination processes. The methodology adopted is made of formulation of instant formula from germinated maize, rice, soya bean and sesame by wet and dry methods, then the determination of acceptability, purchased intention and psychological price by 50 mothers and wet nurses and finally the evaluation of production cost. The results show that flour produced by wet method with an equal proportion of germinated maize, rice and soya bean have the highest production yield (26%), are the most appreciated and have the highest purchased intention (47%). The production cost of this flour (125 FCFA/30 g of flour) is the lower than the price of instant flour sell in the markets (250 à 300 FCFA/50 g of flour). Moreover, the energy density of the produced flour satisfied Codex Alimentarius requirements in terms of infant formula.

Malgré les multiples formulations d’aliments pour enfants qui existent, la malnutrition infantile reste un problème au Cameroun. D’après des études antérieures, elle résulterait en partie des pratiques alimentaires inadéquates, du manque de temps des parents et de la non-prise en compte de mères dans le processus d’élaboration des formules alimentaires. L’objectif de cette étude est d’améliorer l’adoption des farines infantiles produites localement par l’intégration des mères au processus de formulation et de détermination du prix de l’aliment. La méthodologie adoptée consiste à produire une farine instantanée à partir de maïs germé, de riz, de soja et de sésame par des méthodes sèches et humides, puis d’en déterminer l’acceptabilité, l’intention d’achat et le prix psychologique par 50 mamans et nourrices d’enfants et enfin d’évaluer le coût de production. Les résultats montrent que les farines produites par le procédé humide à partir de mélange en proportions égales de maïs germé, de riz et de soja ont le rendement le plus élevé (26%), sont les plus appréciées et ont l’intention d’achat la plus élevée (47%). Le coût de production de ces farines (125 FCFA/30 g de farine) est moins élevé que le prix des farines instantanées présentent sur le marché (250 à 300 FCFA/50 g de farine). Par ailleurs, la densité énergétique des farines produites satisfait les exigences du Codex Alimentarius en matière de farine infantiles.
