The nutritional value and physicochemical characteristics of the fat extracted from the flour of dried termites and sold in the market of Kisangani and Mbuji-Mayi and those of the soils of DR Congo. It emerges from this study that termites contain good values in proteins, lipids, raw ash, minerals. The fat contains good values in fatty acids (Palmitic Acid, Oleic Acid, Linoleic Acid and Stearic Acid and good physicochemical characteristics. These termites do not contain any toxic substance. Therefore the population of DR Congo can consume these termites without any fear. The soils of Kisangani and Mbuji-Mayi contain good physicochemical characteristics. The qualitative analysis of the fat revealed the presence of vitamins A, E, D for the termites of two sites.

La valeur nutritive et les caractéristiques physico-chimiques de la matière grasse extraite de la farine des termites séchés et vendus au marché de Kisangani et Mbuji-Mayi et celles des sols RD Congo. Il ressort de cette étude que les termites renferment de bonnes valeurs en protéines, lipides, cendres brutes, minéraux. La matière grasse renferme de bonnes valeurs en acides gras (Acide palmitique, Acide Oléique, Acide Linoléique et Acide Stéarique et des bonnes caractéristiques physico-chimiques. Ces termites ne renferment aucune substance toxique. Donc la population de RD Congo peut consommer ces termites sans aucune crainte. Les sols de Kisangani et Mbuji-Mayi renferment de bonnes caractéristiques physico-chimiques. L’analyse qualitative de la matière grasse à révéler la présence des vitamines A, E, D pour les termites de deux sites.
