The aim of this study was the determination of phenotypic and zootechnical characterisation in ovine breed slaughtered at the Port-Bouët slaughterhouse for butchery in the city of Abidjan. Thus, a study was carried out on 120 slaughtered ovines breeds, including Djallonké and Sahelian ovine. Indeed, before slaughter, individual and direct observations of breeds, sex, ages and coat color characteristics were done. Also, measurements of the height at the withers and the thoracic perimeter. were done. Then a descriptive analysis was performed, followed by a Chi-square test for qualitative variables. In addition, an ANOVA was performed for the quantitative variables. The results show that ovines of the Sahelian breed (82.5%) are the most slaughtered. Thus, the most dominant coat colors in Djallonké and Sahelian ovine breed were respectively black-piebald (33. 34%) and white (47.48%). Also, ovine 3 years or older (57.50%) were the most slaughtered. In addition, Djallonké and Sahelian ovine breed without horns and pendants were more slaughtered. The breed had an influence on the height at the withers (p < 2e-16) or the thoracic perimeter (p = 1.67e-11). Similarly, sex and age had a significant effect on thoracic perimeter. However, the sex factor had no effect on the height at the withers. In conclusion, the breeds, sex, ages or coat colors of slaughtered ovines at the Port-Bouët slaughterhouse are various.

L’objectif de cette étude était la caractérisation phénotypique et zootechnique des ovins abattus à l’abattoir de Port-Bouët pour la boucherie dans la ville d’Abidjan. À cet effet, une étude a été réalisée sur 120 ovins abattus, dont les ovins de race Djallonké et Sahélienne. En effet, avant abattage, les observations individuelles et directes des caractères races, sexes, âges, couleurs de la robe ont été faites. Suivies des mensurations de la hauteur au garrot et du périmètre thoracique. Après, une analyse descriptive a été réalisée, suivie d’un test de Khi-2 pour les variables qualitatives. En outre, une ANOVA a été réalisée pour les variables quantitatives. Les résultats montrent que les ovins de race Sahélienne (82,5%) sont les plus abattus. Ensuite, les couleurs de la robe les plus dominantes chez les ovins de race Djallonké et Sahélienne étaient respectivement le pie-noir (33,34%) et le blanc (47,48%). Aussi, les ovins de 3 ans ou plus (57,50%) étaient les plus abattus. De plus, les ovins de race Djallonké et Sahélienne dépourvus de cornes et pendeloques étaient plus abattus. La race a eu une influence sur la hauteur au garrot (p < 2.10-16) et le périmètre thoracique (p = 1,67.10-11). De même, le sexe ou l’âge a eu un effet signicatif sur le périmètre thoracique. Toutefois le facteur sexe n’a pas eu d’effet sur la hauteur au garrot. En conclusion, les races, les sexes, les âges, les couleurs de la robes des ovins abattus à l’abattoir de Port-Bouët sont variés.
