Abstract


Ablo is dough fermented very close to cereal, slightly salty and sugary, steam and sold firing under shape of wad the streets and in the similar public places. The objective of the survey is to list, through a bibliographic synthesis, the socioeconomic, technological, physico-chemical and microbiological information on the Ablo in order to provide a document of basis for the researchers who will imply themselves in research on Ablo. The survey permitted to note that the production of Ablo is exclusively an activity feminine. It is a generating activity of incomes that plays a considerable socioeconomic role. The production of the Ablo follows three different technologies to know: the technology using the corn, technology using the only rice and the technology using a mixture of rice and corn. Ablo is consumed everywhere especially in Benin at the time of the ceremonies. The microorganism that predominates during fermentation is the lactic bacteria, the yeasts and mould. Ablo has a weak microbial load to it contamination after transformation. The Ablo has a middle pH of 4, 11 and content in dry matter of the order of 39 - 40%. He contains the proteins, iron, the calcium and magnesium and can be recommended to the vulnerable people.

Ablo est une pâte fermentée céréalière, légèrement salée et sucrée, cuite à la vapeur et vendue sous forme de boulette au bord des rues et dans les places publiques similaires. L’objectif de l’étude est de répertorier, à travers une synthèse bibliographique, les informations socio-économiques, technologiques, physico-chimiques et microbiologiques sur le Ablo afin de fournir un document de base pour les chercheurs qui s’impliqueront dans la recherche sur Ablo. L’étude a permis de noter que la production de Ablo est une activité exclusivement féminine. C’est une activité génératrice de revenus qui joue un rôle socio-économique considérable. La production du Ablo suit trois différentes technologies à savoir : la technologie utilisant le maïs, technologie utilisant le riz seul et la technologie utilisant un mélange de riz et de maïs. Ablo est consommé partout au Bénin surtout lors des cérémonies. Les microorganismes qui prédominent au cours de la fermentation sont les bactéries lactiques, les levures et les moisissures. Ablo a une faible charge microbienne due à sa contamination après transformation. Le Ablo a un pH moyen de 4,11 et une teneur en matière sèche de l’ordre de 39 - 40%. Il renferme des protéines, du fer, du calcium et du magnésium et peut être recommandé aux personnes vulnérables.
