Abstract


In order to meet the nutritional needs of populations, innovations have been made in the production technology of afitin, a condiment of Beninese origin made from African locust bean, intended to improve the taste of food. Among these innovations is the use of soybeans. The objective of this study is to assess the influence of the soybean variety on the quality of the manufactured product obtained. For this, the afitin was produced according to traditional technology and the microbiological, physicochemical, nutritional and sensory analyzes were performed by standard methods. The results showed that taking into account the analytical tolerance, the samples had acceptable microbiological quality. The results of the physico-chemical analyzes revealed that the water content varied from 55.35 to 57.53%. For pH, the values ​​varied from 8.20 to 8.53 while for proteins, they were respectively 36.96, 37.15 and 36.65% for the varieties Jupiter, TGX 1951-3F and TGX 1987-62F. The Jupiter variety had the highest ash (22.47%) and calcium (2865.55mg / kg) content. As for the magnesium and potassium contents, the highest values ​​ (1593.26 mg / Kg and 7770.87mg / Kg) were obtained for the varieties TGX 1951-3F and TGX 1987-62F respectively. Organoleptic analyzes revealed a good appreciation of the samples by consumers.

Dans le but de répondre aux besoins nutritionnels des populations, des innovations ont été apportées à la technologie de production du afitin, un condiment d’origine béninoise à base de graine de néré, destiné à améliorer le gout des aliments. Parmi ces innovations on peut citer l’utilisation des graines de soja. L’objectif de cette étude est d’évaluer l’influence de la variété de soja sur la qualité du produit fini obtenu. Pour ce, le afin a été produit suivant la technologie traditionnelle et les analyses microbiologiques, physicochimiques, nutritionnelles et sensorielles ont été par les méthodes standard. Les résultats ont montré qu’en tenant compte de la tolérance analytique, les échantillons sont de qualité microbiologique acceptable. Les résultats des analyses physico-chimiques ont révélé que la teneur en eau a varié de 55,35 à 57,53%. Pour le pH, les valeurs avaient variées de 8,20 à 8,53 alors que pour les protéines, elles étaient respectivement de 36,96, 37,15 et de 36,65% pour les variétés Jupiter, TGX 1951-3F et TGX 1987-62F. La variété jupiter avait présenté la plus forte teneur en cendre en cendre (22,47%) et en calcium (2865,55mg/kg). Quant aux teneurs en magnésium et potassium, les plus fortes valeurs (1593,26 mg/Kg et 7770,87mg/Kg) ont été obtenues pour les variétés TGX 1951-3F et TGX 1987-62F respectivement. Les analyses organoleptiques ont révélé une bonne appréciation des échantillons par les consommateurs.
